Convection ovens for gastronomy and catering

Our convection ovens, warm air in forced circulation, are ideal to cook, to grill, to cook “au gratin”, to brace ect. Optimal therefore for meats, fish, vegetables and small pastry.

Moreover, thanks to automatic humidifier (sprayed water breaking in), is it possible to restore the superficial humidity of foods with low liquid content and, to mass parity, it obtains more volume and softness of foods.

 
 
Convection ovens mod. 20 CE - 20 CG

These are the biggest ovens - for capacity and power - projected by Coven. They are studied for canteens, communities and big restaurants requiring up to 300 meals.

20 CE is the electrical model, while 20 CG is the gas version with indirect heating (no burned gas in the cooking chamber).

The ovens are equipped with double bolt at the door.

Two fans grant a strong and a uniform ventilation.
